Open Bottles Of Wine

Sometimes it’s hard to know if you should keep a wine once it’s been opened, or if it should be poured out.  The most basic of rules is that if it still tastes fine to you then you can drink it, but if it tastes bad then it is time to toss it out.  Regardless, once a bottle of wine has been opened it should be consumed within a reasonably prompt time period. 

White wine can be resealed with the cork or another closure and should be stored in the refrigerator.  It will stay true for approximately three to four days but then it will likely begin to deteriorate.  This is not to say that you will become sick if you drink it, but simply that it loses its freshness and can become distasteful. 

Opened bottles of red wine tend to last longer.  They can sit resealed on the countertop for three to four days and be perfectly drinkable, but I would only suggest that you leave them out on the counter in cooler weather as extreme heat can bake and spoil the wine.  For a longer life, reds can be refrigerated for up to a week before they begin to deteriorate.  If you keep red wine in your refrigerator, do allow it to warm up to serving temperature before drinking it otherwise the tannin and acidity will overpower the fruit.

Yes, you can keep open wine bottles in your fridge for cooking with but keep in mind that if you wouldn’t want to drink it, you may not wish to cook with it either.  Some people make wine ice cubes with their leftover wine and pop these into stews and sauces as they need them.
